Trisha Yearwood Squash Casserole

Trisha Yearwood’s Squash Casserole is a traditional Thanksgiving dish that’s easy to make and can be served warm or room temperature. You can also make it ahead of time, so that all you have to do is toss everything together before serving.

The recipe below calls for butter and eggs, but you could swap them out for your favorite vegan alternatives or skip them altogether if you prefer.

  • 1/2 Cup butter
  • 1/2 of a Sweet onion like Vidalia (diced)
  • 1 teaspoon salt (peeled and diced). [Salt is a mineral that the body needs to function properly. It’s also used as a preservative, to enhance flavor and preserve food. Salt can be used in cheese making and wine making, among other things!]
  • 1 large egg
  • 2 pounds’ yellow summer squash (trimmed and sliced)
  • 1/4 teaspoon Black pepper
  • 1/2 cup grated cheddar cheese
  • 1/2 cup mayonnaise

Directions: –

  • Butter a 2-quart casserole dish.
  • Preheat the oven to 350 degrees F.
  • Cut the squash and onion into slices and put them in a pot with about a cup of water and 1/2 teaspoon of salt. Cover and cook over medium fire until tender about fifteen minutes. Drain thoroughly, then cool down. This can be a few hours, it’s up to you.
  • To beat the squash with an electric mixer, you want them to be chunky and add to a large bowl. Mix until the egg, mayonnaise, cheese and remaining 1/2 teaspoon salt have been mixed in. Assemble the squash mixture in a baking dish, top with crumbs and bake for thirty minutes.
